Ingredients:
- 2 large eggs
- 2 oz cream cheese
- 1 tsp almond flour
- 1/2 tsp vanilla extract
- 1/4 tsp stevia or erythritol optional
- Pinch of salt
- Cooking spray or butter for the pan
Instructions:
In a blender, combine eggs, cream cheese, almond flour, vanilla extract, sweetener if using, and a pinch of salt
Blend until the batter is smooth and well combined
Heat a non-stick skillet or crepe pan over medium-low heat and lightly grease it with cooking spray or butter
Pour a small amount of the batter into the pan, swirling it around to evenly coat the bottom
Cook for about 1-2 minutes until the edges start to lift and the crepe is lightly browned on the bottom
Carefully flip the crepe and cook for another 1-2 minutes on the other side
Repeat the process with the remaining batter, adding a little more cooking spray or butter to the pan as needed
Serve your Keto crepes with your favorite low-carb toppings such as berries, whipped cream, or sugar-free syrup
