Ingredients:
- 1 lb dried pinto beans, rinsed and soaked overnight
- 1 lb ground beef
- 1 onion, finely chopped
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can 15 oz diced tomatoes
- 1/2 cup barbecue sauce
- 1/4 cup brown sugar
- 2 tbsp tomato paste
- 2 tbsp mustard
- 1 tbsp Worcestershire sauce
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 4 cups beef broth
- Optional toppings: shredded cheddar cheese, chopped green onions, sour cream
Instructions:
Brown the ground beef over medium heat in a big skillet
Eliminate extra fat
Place the beef in the slow cooker after it has browned
To the slow cooker, add the soaked pinto beans, diced tomatoes, diced bell pepper, diced onion, minced garlic, brown sugar, tomato paste, mustard, Worcestershire sauce, chili powder, smoked paprika, salt, and pepper
Stir everything together in the slow cooker after adding the beef broth
Once the beans are soft, cook them on low for 7 to 8 hours with a cover on
Top with sour cream, chopped green onions, and shredded cheddar cheese and serve hot
