Ingredients:
- 1 cup quinoa, rinsed and cooked
- 1 can 15 oz black beans, drained and rinsed
- 1 mango, peeled and diced
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 1 avocado, sliced optional, for serving
Instructions:
In a large bowl, combine cooked quinoa, black beans, mango, red bell pepper, red onion, cherry tomatoes, and cilantro
In a small bowl, whisk together lime juice, olive oil, cumin, chili powder, salt, and pepper
