Ingredients:
- 4 large eggs
- 4 slices of turkey bacon
- 1/2 avocado, sliced
- 1 cup spinach leaves
- 1/4 cup shredded cheddar cheese
- Salt and pepper to taste
- Cooking spray or olive oil for cooking
Instructions:
In a skillet, cook the turkey bacon until crispy
Remove and set aside
In the same skillet, lightly wilt the spinach leaves
Set aside
Using the same skillet, add cooking spray or olive oil if needed, crack the eggs into the skillet and fry until desired doneness
Assemble the breakfast bowl by placing the cooked spinach at the bottom, followed by the fried eggs, sliced avocado, and turkey bacon
Sprinkle shredded cheddar cheese over the top
Season with salt and pepper to taste
