Paleo Vegan Mashed Cauliflower



Cauliflower makes a creamy, flavorful base for this Paleo and Vegan take on the traditional mashed potato dish. While following Paleo and Vegan dietary guidelines, this mashed cauliflower with its rich taste of coconut milk and savory notes of garlic and nutritional yeast is sure to satisfy comfort food cravings.

Ingredients:

  • 1 medium head cauliflower, cut into florets
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1/4 cup full-fat coconut milk
  • 1 tablespoon nutritional yeast
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • Chopped fresh chives, for garnish optional

Instructions:

Steam the cauliflower florets until tender, about 10-12 minutes

Meanwhile, heat the olive oil in a skillet over medium heat

Add the minced garlic and cook until fragrant, about 1-2 minutes

Transfer the steamed cauliflower to a food processor

Add the garlic-infused olive oil, coconut milk, nutritional yeast, sea salt, and black pepper

Process until smooth and creamy, scraping down the sides as needed

Taste and adjust seasoning if necessary

Transfer the mashed cauliflower to a serving bowl, garnish with chopped chives if desired, and serve warm
