Vegan Soba Noodle Edamame Bowl



This vegan copycat soba noodle edamame bowl is a nutritious and delicious meal packed with plant-based protein, fiber, and flavor. It's quick and easy to make, perfect for a satisfying lunch or dinner.

Ingredients:

  • 200g soba noodles
  • 1 cup shelled edamame
  • 1 large carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 2 green onions, thinly sliced
  • 2 tablespoons sesame seeds, toasted
  • 1 tablespoon sesame oil
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 1 tablespoon water
  • Salt and pepper to taste
  • Lime wedges, for serving

Instructions:

Cook soba noodles according to package instructions

Drain and rinse under cold water, then set aside

In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, maple syrup, grated ginger, minced garlic, and water to make the dressing

Set aside

In a large bowl, combine cooked soba noodles, shelled edamame, julienned carrot, sliced red bell pepper, and sliced green onions

Pour the dressing over the noodle and vegetable mixture

Toss until everything is evenly coated

Sprinkle toasted sesame seeds over the bowl and toss again

Season with salt and pepper to taste

Serve the soba noodle edamame bowl with lime wedges on the side for squeezing over the top
