Cajun Shrimp Tacos

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 8 small flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup diced bell peppers any color
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions:

Pour the Cajun seasoning into a bowl and toss the shrimp around to cover them all

Put olive oil in a big skillet and heat it over medium-high heat

Toss in the shrimp and season them

Cook for two to three minutes on each side, or until the shrimp turn pink and opaque

Take it off the heat

For about 30 seconds on each side, warm the flour tortillas in the pan

Add cooked shrimp, diced tomatoes, red onion, and bell pepper to each tortilla, then top with a spoonful of shredded lettuce

Cover in sour cream, top with cilantro, and serve with lime wedges

Crispy WaffleSticks



For dessert, try these tasty and crispy WaffleSticks! Topping them with your favorite sweet sauces makes them taste great.

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Cooking spray or oil for greasing

Instructions:

Preheat your waffle iron according to manufacturer's instructions

In a mixing bowl, whisk together the flour, sugar, baking powder, and salt

In another bowl, beat the egg and then add milk, melted butter, and vanilla extract

Mix well

Pour the wet ingredients into the dry ingredients and stir until just combined

Don't overmix; a few lumps are okay

Lightly grease your waffle iron with cooking spray or oil

Pour the batter onto the waffle iron and close the lid

Cook until the waffles are golden brown and crispy, usually about 4-5 minutes

While following Paleo and Vegan dietary guidelines, this mashed cauliflower with its rich taste of coconut milk and savory notes of garlic and nutritional yeast is sure to satisfy comfort food cravings.

Ingredients:

  • 1 medium head cauliflower, cut into florets
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1/4 cup full-fat coconut milk
  • 1 tablespoon nutritional yeast
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • Chopped fresh chives, for garnish optional

Instructions:

Steam the cauliflower florets until tender, about 10-12 minutes

Meanwhile, heat the olive oil in a skillet over medium heat

Add the minced garlic and cook until fragrant, about 1-2 minutes

Transfer the steamed cauliflower to a food processor

Ingredients:

  • 200g soba noodles
  • 1 cup shelled edamame
  • 1 large carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 2 green onions, thinly sliced
  • 2 tablespoons sesame seeds, toasted
  • 1 tablespoon sesame oil
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 1 tablespoon water
  • Salt and pepper to taste
  • Lime wedges, for serving

Instructions:

Cook soba noodles according to package instructions

These Maple-Vanilla Candied Nuts are a tasty snack that is naturally sweet and great for when you want something sweet. They taste great, are crunchy, and go well with salads, desserts, or just by themselves.

Ingredients:

  • 1 cup mixed nuts such as almonds, pecans, walnuts

Instructions:

Warm the oven up to 325F 160C and put parchment paper on a baking sheet

Put maple syrup, coconut oil, vanilla extract, and salt in a bowl and mix them together until they are well mixed

Put the mixed nuts in the bowl and mix them around until they are covered in the maple syrup mixture all over

Place the nuts on the baking sheet that has been prepared in a single layer

Bake the nuts for 15 to 20 minutes, stirring them once or twice, until they are golden and smell good

Take it out of the oven and let it cool down completely before you serve it

Keep in a container that keeps air out for up to a week
